8 chicken drumsticks

1/4 cup honey

1/4 cup soy sauce (preferably low sodium)

4 cloves garlic, minced

1 tsp ginger, grated

1 tbsp rice vinegar

1 tsp sesame oil

1 tbsp olive oil

1/2 tsp black pepper

1 tsp salt

1/2 tsp red pepper flakes (optional for heat)

2 cups assorted vegetables (such as bell peppers, red onion, and zucchini), chopped

Sesame seeds, for garnish

Fresh cilantro or parsley, for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a large baking tray with parchment paper.

    Prepare the Marinade: In a bowl, combine the honey, soy sauce, minced garlic, grated ginger, rice vinegar, sesame oil, black pepper, salt, and red pepper flakes (if using). Mix well to combine.

      Marinate the Drumsticks: Place the chicken drumsticks in a large resealable plastic bag or a bowl. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag and refrigerate for at least 30 minutes, or ideally 2 hours to allow the flavors to penetrate.
