Steak Gorgonzola Alfredo

8 oz fettuccine pasta

2 tablespoons olive oil

1 lb ribeye steak, trimmed and cut into strips

Salt and pepper, to taste

4 cloves garlic, minced

1 cup heavy cream

1 cup Gorgonzola cheese, crumbled

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Fresh parsley, chopped (for garnish)

Cracked black pepper (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.

    Sear the Steak: In a large skillet, heat the olive oil over medium-high heat. Season the ribeye strips with salt and pepper. Add the steak to the skillet and sear for about 3-4 minutes until browned and cooked to your desired level of doneness. Remove from skillet and set aside.

      Make the Alfredo Sauce: In the same skillet, lower the heat to medium and add the minced garlic. Sauté for 1-2 minutes until fragrant. Pour in the heavy cream and bring to a simmer. Stir in the Gorgonzola and Parmesan cheese, mixing until melted and creamy.

        Combine Ingredients: Add the cooked fettuccine to the skillet, tossing to coat in the sauce. If the sauce is too thick, gradually add a bit of the reserved pasta water until the desired consistency is reached. Add the Italian seasoning, stir well.
