Ingredients

3 cups all-purpose flour, plus extra for dusting

1 packet (2 ¼ teaspoons) active dry yeast

1 cup warm milk (about 110°F or 43°C)

2 tablespoons granulated sugar

1 teaspoon salt

3 tablespoons unsalted butter, melted

2 tablespoons fresh dill, finely chopped (or 1 tablespoon dried dill)

3 cloves garlic, minced

1 large egg, beaten (for egg wash)

Coarse sea salt, for sprinkling

Instructions

Activate the Yeast: In a small bowl, combine warm milk, sugar, and active dry yeast. Allow it to sit for about 5-10 minutes until frothy.

Mix the Dough: In a large mixing bowl, whisk together the flour and salt. Make a well in the center, then add the yeast mixture, melted butter, chopped dill, and minced garlic.

Knead the Dough: Stir until a dough begins to form. Transfer to a lightly floured surface and knead for about 8-10 minutes until the dough is smooth and elastic.

First Rise: Place the kneaded dough in a greased bowl, cover with a clean kitchen towel or plastic wrap, and let it rise in a warm area for 1-1.5 hours, or until it doubles in size.

Shape the Rolls: After rising, punch down the dough to release air. Divide it into 12 equal pieces. Shape each piece into a ball and place them on a greased baking sheet, spacing them slightly apart.

Second Rise: Cover the rolls again with a towel and let them rise for about 30-45 minutes until puffy.

Preheat the Oven: While the rolls are rising, preheat your oven to 375°F (190°C).

Egg Wash: Once the rolls have risen, brush the tops with the beaten egg to give them a golden crust. Sprinkle coarse sea salt on top for extra flavor.

Bake: Place the rolls in the preheated oven and bake for 20-25 minutes, or until they are golden brown and sound hollow when tapped on the bottom.

Cool and Serve: Remove the rolls from the oven and allow them to cool slightly on a wire rack. Serve warm, enjoy the squishy texture, and the aromatic garlic dill flavor!
