Spinach Mushroom Stuffed Crepes

Ingredients
  

For the Crepes:

1 cup all-purpose flour

2 large eggs

2 cups milk

2 tablespoons melted butter

1/4 teaspoon salt

For the Filling:

2 cups fresh spinach, chopped

1 cup mushrooms, diced (button or cremini work well)

1 small onion, finely chopped

2 cloves garlic, minced

1/2 cup ricotta cheese

1/2 cup mozzarella cheese, shredded

1/4 teaspoon nutmeg

Salt and pepper, to taste

2 tablespoons olive oil

For Topping:

1/2 cup grated Parmesan cheese

Fresh herbs (basil or parsley) for garnish

Instructions
 

Prepare the Crepes:

    - In a mixing bowl, whisk together flour and salt. In another bowl, blend eggs and milk. Slowly pour the wet ingredients into the flour mixture, whisking until smooth. Stir in the melted butter. Let the batter rest for 30 minutes.

      Cook the Crepes:

        - Heat a non-stick skillet over medium heat and lightly grease it with butter or oil. Pour about 1/4 cup of batter into the center of the skillet, tilting to spread it evenly. Cook for 1-2 minutes on each side until golden. Repeat with the remaining batter, stacking the crepes on a plate.

          Prepare the Filling:

            - In a large skillet, heat olive oil over medium heat. Add onions and garlic; sauté until soft and fragrant. Add the diced mushrooms and cook until they release their moisture and brown slightly, about 5 minutes. Add the spinach and cook until wilted, about 2 minutes. Season with nutmeg, salt, and pepper.

              Combine the Filling:

                - Remove the pan from heat and let the mixture cool slightly. In a bowl, mix in ricotta and mozzarella cheese until well combined.

                  Assemble the Crepes:

                    - Place a generous amount of the filling in the center of each crepe. Fold the sides over and roll up tightly. Repeat until all crepes are filled.

                      Bake and Serve:

                        - Preheat your oven to 350°F (175°C). Place the stuffed crepes in a greased baking dish. Sprinkle grated Parmesan cheese on top. Bake for 20 minutes, until heated through and the cheese is melted.

                          Garnish and Serve:
