Spinach Dip Chicken Pasta

Ingredients
  

8 oz (225g) pasta of your choice (penne or rotini works great)

2 cups fresh spinach, chopped

1 cup cream cheese, softened

1 cup sour cream

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 lb (450g) boneless, skinless chicken breasts, cubed

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet, heat olive oil over medium heat. Add the cubed chicken and season with salt, pepper, and onion powder. Cook until the chicken is browned and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.

      Prepare the Spinach Dip Sauce: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Then, lower the heat and add the cream cheese, stirring until melted and smooth. Gradually mix in the sour cream, mozzarella cheese, and Parmesan cheese, stirring until well combined.

        Combine Ingredients: Add the chopped spinach and cooked chicken back into the sauce, mixing well. Season with Italian seasoning and adjust salt and pepper to taste.

          Mix with Pasta: Add the cooked pasta to the skillet and toss everything together until the pasta is well coated in the creamy spinach dip sauce.

            Serve: Remove from heat and let it cool for a minute. Garnish with fresh parsley before serving.
