Ingredients

8 oz (about 225 g) pasta (penne or rigatoni works well)

1 cup frozen spinach, thawed and drained

1 cup canned artichoke hearts, drained and chopped

1 cup cream cheese, softened

1 cup sour cream

1 ½ cups shredded mozzarella cheese, divided

½ cup grated Parmesan cheese

1 tsp garlic powder

1 tsp onion powder

½ tsp crushed red pepper flakes (optional)

Salt and pepper, to taste

1 tbsp olive oil

½ cup breadcrumbs (optional, for topping)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the oven: Start by preheating your oven to 375°F (190°C).

Cook the pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside.

Prepare the sauce: In a large mixing bowl, combine the softened cream cheese, sour cream, 1 cup of shredded mozzarella, Parmesan cheese, garlic powder, onion powder, and crushed red pepper flakes, if using. Mix until well combined.

Add vegetables: Fold in the drained spinach and chopped artichoke hearts into the creamy cheese mixture. Season with salt and pepper to taste.

Combine with pasta: Add the cooked pasta to the bowl and gently fold until the pasta is evenly coated with the cream mixture.

Transfer to the baking dish: Grease a 9x13 inch (or similar-sized) baking dish with olive oil. Pour the pasta mixture into the dish and spread it out evenly.

Add toppings: If using, sprinkle the breadcrumbs over the top of the pasta bake. Then, sprinkle the remaining ½ cup of mozzarella cheese on top for that cheesy crust.

Bake: Place the baking dish in the preheated oven and bake for about 25-30 minutes or until the top is golden and bubbly.

Garnish and serve: Once done, remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.

Enjoy your deliciously creamy Spinach Artichoke Pasta Bake, perfect for a cozy dinner or a potluck gathering!
