4 boneless, skinless chicken breasts

2 cups fresh spinach, chopped

1 cup feta cheese, crumbled

1/4 cup cream cheese, softened

2 cloves garlic, minced

1/2 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 cup sun-dried tomatoes, chopped (optional)

2 tablespoons olive oil

1 tablespoon lemon juice

Toothpicks or kitchen twine for closing the chicken

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Filling: In a large mixing bowl, combine the chopped spinach, feta cheese, cream cheese, minced garlic, oregano, salt, pepper, and sun-dried tomatoes (if using). Mix well until all ingredients are evenly incorporated.

      Prepare the Chicken Breasts: Place each chicken breast between two sheets of plastic wrap or parchment paper. Gently pound them with a meat mallet or rolling pin until they are about 1/2 inch thick. This helps to ensure even cooking and makes them easier to roll.

        Stuff the Chicken: Take about 1/4 of the filling mixture and spoon it into the center of each chicken breast. Be careful not to overstuff. Fold the sides of the chicken over the filling, then roll up from the narrower end to the thicker end. Secure the ends with toothpicks or tie with kitchen twine to hold the shape.

          Sear the Chicken: In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the stuffed chicken breasts, seam side down, and sear for 4-5 minutes until golden brown. Carefully turn the chicken and sear the other side for an additional 4-5 minutes.

            Add Lemon Juice: Once both sides are browned, pour lemon juice over the chicken and transfer the skillet to the preheated oven.

              Bake: Bake in the oven for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

                Rest and Serve: Carefully remove the chicken from the oven. Allow it to rest for about 5 minutes before removing toothpicks or twine. Slice the chicken in half to showcase the colorful filling and serve warm, garnished with extra spinach or herbs, if desired.
