Spicy Tuna Sushi Stacks

Ingredients
  

For the Sushi Rice:

1 cup sushi rice

1 1/4 cups water

2 tbsp rice vinegar

1 tbsp sugar

1/2 tsp salt

For the Spicy Tuna:

1/2 lb sushi-grade tuna, diced into small cubes

2 tbsp mayonnaise (preferably Japanese Kewpie)

1-2 tsp Sriracha (adjust for spice level)

1 green onion, finely chopped

1 tsp sesame oil

1 tsp soy sauce

Salt to taste

For Assembly:

1 avocado, sliced

1 cucumber, julienned

1 seaweed sheet, cut into small squares

Black sesame seeds, for garnish

Wasabi and pickled ginger, for serving (optional)

Instructions
 

Prepare the Sushi Rice:

    - Rinse the sushi rice under cold water until the water runs clear.

      - Combine the rinsed rice and water in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until the water is absorbed and rice is tender.

        - Once cooked, remove from heat and let it sit, covered, for another 10 minutes.

          - In a small bowl, stir together rice vinegar, sugar, and salt until dissolved. Fold this mixture gently into the warm rice. Allow to cool to room temperature.

            Make the Spicy Tuna:

              - In a mixing bowl, combine diced tuna, mayonnaise, Sriracha, green onion, sesame oil, soy sauce, and a pinch of salt. Mix gently but thoroughly until the tuna is evenly coated. Adjust the spice level by adding more Sriracha if desired.

                Assemble the Sushi Stacks:

                  - Using a food ring or a small cup, layer the ingredients starting with a spoonful of sushi rice at the bottom. Press it down gently.

                    - Add a layer of the spicy tuna mixture on top of the rice, followed by a piece of avocado and cucumber.

                      - Repeat the layers until you reach the desired height, finishing with a layer of spicy tuna.

                        Garnish and Serve:

                          - Carefully remove the food ring or cup. Sprinkle the top with black sesame seeds for a touch of elegance.

                            - Serve the sushi stacks with additional sliced avocado, cucumber, wasabi, and pickled ginger on the side.
