1 lb (450g) ground chicken

1/4 cup natural peanut butter

2 tbsp soy sauce

1 tbsp fish sauce

1 tbsp lime juice

1 tbsp sriracha (adjust to taste)

2 cloves garlic, minced

1 tbsp fresh ginger, grated

1/4 cup green onions, chopped

1/4 cup red bell pepper, finely diced

1/4 cup shredded carrots

1/4 cup cilantro, chopped

1 head of butter or iceberg lettuce, leaves separated

Chopped peanuts, for garnish

Lime wedges, for serving

Instructions
 

Cook the Chicken: In a large skillet over medium heat, add the ground chicken. Cook, breaking it apart with a spatula, until it's no longer pink, about 5-7 minutes.

    Prepare the Sauce: In a bowl, mix together the peanut butter, soy sauce, fish sauce, lime juice, sriracha, minced garlic, and grated ginger until smooth.

      Combine Ingredients: Pour the peanut sauce over the cooked chicken in the skillet. Stir to combine, allowing the sauce to coat the chicken evenly. Cook for another 3-4 minutes, stirring occasionally, until everything is heated through.

        Add Veggies: Stir in the chopped green onions, red bell pepper, shredded carrots, and cilantro. Mix well and cook for an additional 2 minutes to soften the veggies slightly.

          Assemble the Boats: Take a lettuce leaf and spoon a generous amount of the spicy peanut chicken mixture into the center of each leaf.
