Spicy Szechuan Noodles

200g egg noodles

2 tablespoons vegetable oil

3 cloves garlic, minced

1 inch ginger, grated

2 tablespoons Szechuan peppercorns

1 tablespoon chili paste (adjust for heat)

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon hoisin sauce

1 teaspoon sesame oil

1 bell pepper, thinly sliced

1 carrot, julienned

4 green onions, chopped (reserve some for garnish)

1 cup bean sprouts

1 tablespoon sesame seeds (for garnish)

Instructions
 

Cook the Noodles: In a pot of boiling water, cook the egg noodles according to package instructions until al dente. Drain and rinse under cold water, set aside.

    Prepare the Szechuan Sauce: In a small bowl, mix together the soy sauce, rice vinegar, hoisin sauce, and sesame oil. Set aside.

      Sauté Aromatics: Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the minced garlic, grated ginger, and Szechuan peppercorns. Stir-fry for about 1-2 minutes until fragrant but not burnt.

        Add Vegetables: Toss in the sliced bell pepper and julienned carrot. Stir-fry for another 3-4 minutes until the vegetables are just tender.

          Incorporate Noodles: Add the cooked noodles to the skillet and pour over the Szechuan sauce and chili paste. Use tongs to toss everything together until the noodles are well-coated with the sauce and heated through.

            Finish Up: Stir in the bean sprouts and half of the chopped green onions. Cook for an additional minute to warm through.
