As you prepare to assemble your Spicy Sriracha Tuna Melt Quesadillas, it’s essential to ensure an even distribution of the filling. Start by laying one tortilla flat on your work surface. Using a spoon or a spatula, place a generous yet controlled amount of the tuna mixture onto one half of the tortilla. Aim for about a third to half of the tortilla's surface area. Overstuffing can lead to messy cooking and soggy quesadillas, as excess filling might spill out during cooking.

Ingredients

1 can (5 oz) tuna, drained

1/4 cup mayonnaise

2 tablespoons Sriracha sauce (adjust to your spice preference)

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and pepper to taste

1 cup shredded sharp cheddar cheese

1/2 cup diced red onion

1/4 cup sliced jalapeños (fresh or pickled)

4 large flour tortillas

2 tablespoons olive oil (for frying)

Fresh cilantro, chopped (for garnish)

Instructions

Prepare the Tuna Mixture:

In a medium mixing bowl, combine the drained tuna, mayonnaise, Sriracha sauce, garlic powder, onion powder, and a pinch of salt and pepper. Mix well until all ingredients are evenly incorporated.

      Assemble the Quesadillas:

On one half of each tortilla, spread a generous amount of the spicy tuna mixture. Sprinkle 1/4 cup of shredded cheddar cheese over the tuna, then add a spoonful of diced red onions and a few slices of jalapeños. Fold the tortilla over to cover the filling.

          Cook the Quesadillas:

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Carefully place two folded quesadillas in the skillet and cook for about 3-4 minutes on each side, or until the tortillas are golden brown and the cheese is melted. Add more oil as needed for the second batch.

              Serve:

Once cooked, remove the quesadillas from the skillet. Let them sit for a minute before cutting them into wedges. Garnish with fresh cilantro and serve warm with additional Sriracha sauce on the side for dipping.

                  Enjoy:

Dig into your spicy Sriracha tuna melt quesadillas, savoring the gooey cheese and zesty tuna filling!
