4 large ears of fresh corn on the cob

1/4 cup Sriracha sauce

1/4 cup melted butter

2 tablespoons honey

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon cumin

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon lime juice

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Prep the Corn: Start by carefully cutting the corn cobs into ribs. Stand an ear of corn upright on a cutting board and slice down the sides with a sharp knife to remove the kernels. Then, take each cob and cut it into 4 sections vertically.

    Make the Spicy Sauce: In a mixing bowl, combine the melted butter, Sriracha sauce, honey, garlic powder, onion powder, smoked paprika, cumin, salt, black pepper, and lime juice. Whisk until smooth and well combined.

      Coat the Corn Ribs: Preheat your grill or oven to medium-high heat (about 400°F/200°C). Place the corn ribs in a large bowl and pour the spicy sauce over them, tossing until each piece is evenly coated.

        Grill or Bake the Corn Ribs:

          - Grilling: Place the corn ribs directly on the grill grates. Grill for about 8-10 minutes, turning occasionally, until they are charred and slightly crispy.

            - Baking: If you prefer to use the oven, lay the corn ribs on a baking sheet lined with parchment paper. Bake for 20-25 minutes, flipping halfway through, until they have a nice golden char.

              Serve: Once cooked, remove the corn ribs from the heat. Transfer them to a serving platter and garnish with fresh chopped cilantro. Serve with lime wedges on the side for an extra burst of flavor.
