1 lb (450g) boneless, skinless chicken breasts, sliced into thin strips

3 tablespoons peanut butter (creamy or chunky, your choice)

2 tablespoons soy sauce (low-sodium recommended)

1 tablespoon rice vinegar

1 tablespoon sriracha or your favorite hot sauce (adjust to taste)

1 tablespoon honey or maple syrup

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 red bell pepper, sliced

1 cup broccoli florets

1 carrot, julienned

1 small onion, thinly sliced

2 tablespoons vegetable oil (or sesame oil for added flavor)

Salt and pepper, to taste

Chopped green onions, for garnish

Sesame seeds, for garnish

Cooked rice or noodles, for serving

Instructions
 

Prepare the sauce: In a medium bowl, whisk together peanut butter, soy sauce, rice vinegar, sriracha, honey, minced garlic, and grated ginger until smooth and well combined. Set aside.

    Cook chicken: Heat a large skillet or wok over medium-high heat. Add 1 tablespoon of vegetable oil. Once hot, add the sliced chicken, season lightly with salt and pepper, and cook for about 5-7 minutes until browned and cooked through. Remove chicken from the skillet and set aside.

      Sauté vegetables: In the same skillet, add the remaining tablespoon of oil. Add sliced onion, bell pepper, broccoli, and carrot. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.

        Combine everything: Return the cooked chicken to the skillet with the vegetables. Pour the peanut butter sauce over the chicken and veggies. Toss everything together to ensure the chicken and vegetables are well coated in the sauce. Cook for an additional 2-3 minutes, allowing the sauce to thicken a bit.

          Serve: Remove from heat. Serve hot over a bed of cooked rice or noodles. Garnish with chopped green onions and sesame seeds.
