1 lb (450g) beef sirloin or ribeye, thinly sliced

1 cup soy sauce

3 tbsp brown sugar

2 tbsp sesame oil

4 cloves garlic, minced

1 inch piece ginger, grated

2 tbsp gochujang (Korean red chili paste)

1 tbsp rice vinegar

1 tbsp sesame seeds

2 green onions, finely chopped

2 cups cooked jasmine rice

1 cup thinly sliced cucumber

1 cup shredded carrots

1 cup bean sprouts (optional)

Kimchi, for serving (optional)

Lettuce leaves, for serving (optional)

Instructions
 

Prepare Marinade: In a bowl, whisk together soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, gochujang, rice vinegar, and sesame seeds until well combined.

    Marinate Beef: Add the sliced beef to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

      Cook the Beef: Heat a large skillet or grill pan over medium-high heat. Once hot, add the marinated beef in batches, making sure not to overcrowd the pan. Cook for 3-4 minutes until the beef is browned and cooked through. Remove from heat and let it rest for a few minutes.

        Prepare Bowls: In serving bowls, layer the cooked jasmine rice as the base. Top with the cooked bulgogi beef, sliced cucumbers, shredded carrots, and bean sprouts.

          Garnish: Sprinkle chopped green onions on top and, if desired, add kimchi and lettuce leaves on the side for a fresh crunch.
