Spicy Korean BBQ Cauliflower Bites

1 large head of cauliflower, cut into bite-sized florets

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust to taste)

½ teaspoon salt

½ teaspoon black pepper

½ cup gochujang (Korean chili paste)

¼ cup honey or maple syrup (for a vegan option)

2 tablespoons soy sauce or tamari (for gluten-free)

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 tablespoon sesame seeds (for garnish)

2 green onions, sliced (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly grease it.

    Prepare Cauliflower: In a large mixing bowl, combine the cauliflower florets with olive oil, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper. Toss well to coat all the florets evenly in the spices.

      Roast Cauliflower: Spread the seasoned cauliflower florets in a single layer on the prepared baking sheet. Roast in the preheated oven for about 25-30 minutes, or until they are tender and golden brown. Toss them halfway through roasting for even cooking.

        Make the Sauce: While the cauliflower is roasting, prepare the spicy Korean BBQ sauce. In a medium bowl, whisk together gochujang, honey (or maple syrup), soy sauce, rice vinegar, and sesame oil until smooth and well combined.

          Combine Cauliflower and Sauce: Once the cauliflower is roasted, remove it from the oven and drizzle the spicy Korean BBQ sauce over the hot cauliflower. Toss gently to coat all the florets evenly in the sauce.

            Return to Oven (Optional): For an extra caramelized effect, return the coated cauliflower to the oven and roast for an additional 5-7 minutes.

              Serve: Remove the cauliflower bites from the oven. Transfer to a serving platter, sprinkle with sesame seeds, and garnish with sliced green onions. Serve immediately as a delicious appetizer or side dish.
