Spicy Hatch Chili Sweet Potato Wraps

2 medium sweet potatoes, peeled and diced

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon cayenne pepper (adjust for spice tolerance)

Salt and pepper, to taste

1 cup Hatch green chiles, roasted and chopped

1 can (15 oz) black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1/2 cup red onion, finely chopped

1 avocado, sliced

1 cup spinach or mixed greens

4 large whole wheat or spinach wraps

Optional: sour cream or Greek yogurt for serving

Optional: fresh cilantro, chopped for garnish

Instructions
 

Roast the Sweet Potatoes: Preheat your oven to 425°F (220°C). In a large mixing bowl, toss the diced sweet potatoes with olive oil, smoked paprika, ground cumin, cayenne pepper, salt, and pepper until evenly coated. Spread the sweet potatoes in a single layer on a baking sheet. Roast for 25-30 minutes, or until fork-tender and slightly caramelized, stirring halfway through.

    Prepare the Filling: In a large bowl, combine the roasted sweet potatoes, chopped Hatch chiles, black beans, corn, and red onion. Mix well to ensure even distribution of flavors. Taste and adjust seasoning with salt and pepper if needed.

      Assemble the Wraps: Lay a whole wheat or spinach wrap flat on a clean surface. Start by layering a handful of spinach or mixed greens in the center. Spoon a generous portion of the sweet potato filling over the greens, then add a few slices of avocado on top.

        Wrap It Up: Fold the sides of the wrap inwards, then roll from the bottom up to secure the filling. Continue rolling until you reach the top edge, sealing the wrap. Repeat with the remaining wraps and filling.

          Serve: Slice each wrap in half diagonally and serve with dollops of sour cream or Greek yogurt, if desired. Garnish with fresh cilantro for added flavor.
