1 lb boneless, skinless chicken thighs

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon chili powder

½ teaspoon cayenne pepper (adjust for spice level)

2 cloves garlic, minced

Juice of 1 lime

Salt and pepper to taste

8 small corn tortillas

1 cup shredded red cabbage

1 ripe avocado, diced

¼ cup fresh cilantro, chopped

½ cup diced tomatoes

½ cup sour cream or Greek yogurt (optional)

Lime wedges for serving

Marinate the Chicken: In a bowl, combine the olive oil, smoked paprika, ground cumin, chili powder, cayenne pepper, minced garlic, lime juice, salt, and pepper. Add the chicken thighs and coat them thoroughly in the marinade. Let it sit for at least 30 minutes, or up to 2 hours in the fridge for more flavor.

    Cook the Chicken: Heat a large skillet over medium-high heat. Add the marinated chicken thighs and cook for 7-8 minutes per side, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F). Remove from skillet and let rest for a few minutes.

      Shred the Chicken: Once cooled slightly, shred the chicken using two forks or chop it into bite-sized pieces.

        Warm the Tortillas: In the same skillet, lightly toast each corn tortilla for about 20-30 seconds on each side until warm and pliable.

          Assemble the Tacos: In each tortilla, place a generous amount of shredded chicken, then top with shredded cabbage, diced avocado, tomatoes, and fresh cilantro. Drizzle with sour cream or Greek yogurt if desired.

            Serve: Serve the tacos immediately with lime wedges on the side for squeezing over the top.
