Spicy Cajun Shrimp Alfredo Pasta

1 pound large shrimp, peeled and deveined

8 ounces fettuccine pasta

2 tablespoons olive oil

1 teaspoon Cajun seasoning

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (adjust to taste)

Salt and black pepper to taste

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 tablespoon butter

1 teaspoon lemon juice

Fresh parsley, chopped, for garnish

Instructions
 

Prepare the pasta: In a large pot, bring salted water to a boil. Add fettuccine and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

    Season the shrimp: In a bowl, toss the shrimp with olive oil, Cajun seasoning, smoked paprika, cayenne pepper, salt, and black pepper until evenly coated.

      Cook the shrimp: In a large skillet over medium-high heat, add the seasoned shrimp in a single layer. Cook for about 2-3 minutes on each side, or until they are pink and opaque. Remove the shrimp from the skillet and set aside.

        Create the Alfredo sauce: In the same skillet, reduce the heat to medium and add butter. Once melted, add minced garlic and sauté for about 1 minute until fragrant.

          Combine cream and cheese: Pour in heavy cream and bring to a gentle simmer. Gradually whisk in the grated Parmesan cheese until the sauce is smooth. If the sauce is too thick, gradually add reserved pasta water until desired consistency is reached.

            Add shrimp and pasta: Return the cooked shrimp to the skillet, then add the drained fettuccine and toss everything together until well coated in the Alfredo sauce. Stir in lemon juice for added brightness.

              Serve: Plate the pasta and garnish with fresh parsley. Optionally, sprinkle extra Parmesan cheese and a dash of Cajun seasoning on top for added flavor.
