4 salmon fillets

2 tablespoons Cajun seasoning

1 tablespoon olive oil

1 cup corn kernels (fresh, frozen, or grilled)

1 ripe avocado, diced

2 cups cooked brown rice (or quinoa)

1 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1 lime, juiced

1/4 cup fresh cilantro, chopped

Salt and pepper to taste

Optional: hot sauce for extra spice

Prep the Salmon: In a bowl, coat the salmon fillets with olive oil and sprinkle the Cajun seasoning generously over each fillet. Ensure they are well-coated. Let them marinate for about 15 minutes while you prepare other ingredients.
