Spicy Buffalo Cauliflower Tostadas

1 medium head of cauliflower, cut into florets

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon onion powder

½ teaspoon cayenne pepper (adjust to taste)

Salt and pepper, to taste

½ cup hot sauce (e.g., Frank's RedHot)

8 corn tostada shells

1 cup shredded lettuce

1 ripe avocado, sliced

½ cup crumbled feta or blue cheese (optional)

¼ cup sour cream or Greek yogurt (for drizzling)

Fresh cilantro or parsley for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Cauliflower: In a large bowl, combine the cauliflower florets, olive oil, garlic powder, smoked paprika, onion powder, cayenne pepper, salt, and pepper. Toss until the cauliflower is evenly coated.

      Roast the Cauliflower: Spread the seasoned cauliflower onto a baking sheet lined with parchment paper. Roast in the preheated oven for about 25-30 minutes, flipping halfway through, until the florets are tender and crispy on the edges.

        Buffalo Sauce: While the cauliflower is roasting, in a small saucepan over low heat, combine the hot sauce with a splash of olive oil. Stir to mix well and warm it up, then set aside.
