2 ¾ cups all-purpose flour

2 teaspoons cream of tartar

1 teaspoon baking soda

½ teaspoon salt

1 tablespoon chai spice mix (blend of cinnamon, ginger, cardamom, and cloves)

1 cup unsalted butter, softened

1 ½ cups granulated sugar

¼ cup packed brown sugar

2 large eggs

1 teaspoon vanilla extract

¼ cup granulated sugar (for rolling)

2 tablespoons chai spice mix (for rolling)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    Mix the Dry Ingredients: In a large bowl, whisk together the flour, cream of tartar, baking soda, salt, and 1 tablespoon of chai spice mix. Set aside.

      Cream Butter and Sugars: In another large bowl, use an electric mixer to cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).

        Add Eggs and Vanilla: Beat in the eggs, one at a time, followed by the vanilla extract, mixing until fully combined.

          Incorporate Dry Ingredients: Gradually add the dry mixture to the wet mixture, mixing on low speed until just combined. Be careful not to overmix.

            Prepare the Rolling Mix: In a small bowl, combine the ¼ cup of granulated sugar with the 2 tablespoons of chai spice mix.

              Form the Cookies: Scoop about 1-2 tablespoons of the cookie dough and roll it into a ball. Roll each ball in the chai-sugar mixture to coat evenly.

                Bake the Cookies: Place the dough balls on the prepared baking sheets, spacing them about 2 inches apart. Bake in the preheated oven for 10-12 minutes, or until the edges are set but the centers are still soft.
