4 cups milk (whole or coconut milk for a dairy-free option)

1 large apple, peeled, cored, and diced (preferably Granny Smith or Honeycrisp)

1/2 cup granulated sugar (adjust to taste)

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1 teaspoon vanilla extract

1/4 teaspoon salt

1/2 cup raisins or sultanas (optional)

2 tablespoons unsalted butter (or coconut oil for dairy-free)

Fresh apple slices and a sprinkle of cinnamon for garnish

Prepare the Rice: Rinse the Arborio rice under cold water until the water runs clear. This helps remove excess starch and ensures a creamier texture in your pudding.

    Cook the Rice: In a large saucepan, combine the rinsed rice and 1 cup of milk. Bring to a gentle boil over medium heat, stirring frequently. Once boiling, reduce the heat to low and simmer for about 15 minutes, stirring occasionally, until the rice is tender.

      Add Remaining Ingredients: Stir in the remaining 3 cups of milk, diced apple, sugar, spices (cinnamon, nutmeg, ginger), vanilla extract, salt, and raisins (if using). Continue to cook the mixture over low heat, stirring frequently to prevent sticking.
