Ingredients

1 cup grated zucchini (excess moisture squeezed out)

½ cup granulated sugar

½ cup brown sugar, packed

½ cup unsalted butter, softened

1 large egg

1 teaspoon vanilla extract

1 teaspoon baking soda

½ teaspoon baking powder

½ teaspoon ground cinnamon

½ teaspoon salt

1 ½ cups all-purpose flour

½ cup semi-sweet chocolate chips (or nuts if preferred)

Optional: powdered sugar for dusting

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mix Wet Ingredients: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add in the egg and vanilla extract, mixing until well combined.

Incorporate Zucchini: Stir in the grated zucchini into the wet ingredients. It's essential to ensure the zucchini is well integrated into the mixture.

Combine Dry Ingredients: In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.

Combine Mixtures: Gradually add the dry mixture to the wet mixture, stirring until just combined. Be careful not to over-mix.

Add Chocolate Chips: Gently fold in the chocolate chips until evenly distributed.

Scoop Cookies: Using a spoon or cookie scoop, drop tablespoon-sized amounts of dough onto the prepared baking sheet, leaving space between each cookie.

Bake: Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden and the centers appear set. They will continue to firm up as they cool.

Cool: Remove from the oven and let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Optional Dusting: If desired, sprinkle with powdered sugar before serving for an extra touch of sweetness!
