300g spaghetti

150g thick-cut bacon, chopped

3 large eggs

100g grated Parmigiano-Reggiano cheese

2 cloves garlic, minced

1 tablespoon olive oil

Salt, to taste

Freshly ground black pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Spaghetti: In a large pot of boiling salted water, cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and return it to the pot.

    Prepare the Bacon: In a large skillet over medium heat, add the chopped bacon. Cook until crispy and golden brown, about 5-7 minutes. Use a slotted spoon to transfer the bacon to a paper towel-lined plate, leaving the rendered fat in the skillet.

      Saute Garlic: Add the minced garlic to the skillet with the bacon fat and sauté for about 1 minute, or until fragrant. Be careful not to let it burn.

        Combine Pasta and Bacon: Add the drained spaghetti to the skillet with the garlic and fat. Toss well to ensure the pasta is coated in the flavorful fat.

          Create the Carbonara Sauce: In a separate bowl, whisk together the eggs, grated Parmigiano-Reggiano cheese, and a generous amount of freshly ground black pepper.
