Southwest Chicken & Sweet Potato Hash

2 medium sweet potatoes, peeled and diced into 1/2-inch cubes

1 lb boneless, skinless chicken breast, cut into bite-sized pieces

1 red bell pepper, diced

1 green bell pepper, diced

1 small red onion, diced

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon paprika

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

2 tablespoons olive oil

1/2 cup corn (fresh, frozen, or canned)

1 avocado, diced (for topping)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Prepare the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes, season with salt and pepper, and cook for 10-12 minutes, stirring occasionally, until they are tender and starting to brown. Once cooked, remove the sweet potatoes from the skillet and set aside.

    Cook the Chicken: In the same skillet, add the remaining tablespoon of olive oil. Increase the heat to medium-high and add the chicken pieces. Season with cumin, chili powder, paprika, cayenne, salt, and pepper. Cook for 5-7 minutes until the chicken is browned and cooked through, stirring occasionally.

      Sauté the Vegetables: Add the red onion, red bell pepper, and green bell pepper to the skillet with the chicken. Cook for an additional 3-5 minutes until the peppers and onion are tender. Stir in the minced garlic and corn, cooking for another minute until fragrant.

        Combine Ingredients: Return the cooked sweet potatoes to the skillet, mixing everything together gently. Cook for an additional 2-3 minutes until heated through. Taste and adjust the seasoning if necessary.

          Serve: Remove from heat and serve hot, topped with diced avocado and fresh cilantro. Serve lime wedges on the side for an added burst of flavor.
