Ingredients

1 lb elbow macaroni

4 cups sharp cheddar cheese, shredded

2 cups whole milk

1 cup heavy cream

1/2 cup unsalted butter (1 stick)

1/2 cup all-purpose flour

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1/2 cup breadcrumbs (optional, for topping)

1/4 cup grated Parmesan cheese (optional, for topping)

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Make the Roux: In a large saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for about 2-3 minutes until it's a light golden color, stirring constantly to make sure it doesn't burn.

Create the Cheese Sauce: Slowly whisk in the whole milk and heavy cream. Continue to stir until the mixture thickens (about 5 minutes). Add in the garlic powder, onion powder, smoked paprika, salt, and pepper.

Add the Cheese: Remove the saucepan from the heat and stir in the shredded sharp cheddar cheese until it's completely melted and the sauce is creamy.

Combine Pasta and Sauce: Add the cooked macaroni into the cheese sauce, stirring to combine everything evenly.

Prepare for Baking: Preheat your oven to 350°F (175°C). If you want a crunchy top, transfer the macaroni and cheese to a greased 9x13 inch baking dish. In a small bowl, combine breadcrumbs and grated Parmesan cheese, then sprinkle it evenly over the mac and cheese.

Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden and bubbly.

Garnish and Serve: Once out of the oven, let it cool for a few minutes. Garnish with chopped fresh parsley before serving.
