Southern-Style Honey Butter Cornbread Poppers

1 cup cornmeal

1 cup all-purpose flour

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup buttermilk

2 large eggs

1/4 cup unsalted butter, melted

1 cup corn kernels (fresh, frozen, or canned)

1/4 cup honey

1/2 cup unsalted butter, softened (for honey butter)

1/4 teaspoon cinnamon (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a mini muffin tin or use silicone popper molds.

    Mix Dry Ingredients: In a large bowl, combine cornmeal, flour, granulated sugar, baking powder, and salt. Stir until well mixed.

      Whisk Wet Ingredients: In another bowl, whisk together buttermilk, eggs, and melted butter until combined and slightly frothy.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix. Fold in the corn kernels.

          Fill Muffin Tin: Spoon the cornbread batter into the prepared muffin tin, filling each cup about 2/3 full.

            Bake: Bake in the preheated oven for 15-18 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.

              Prepare Honey Butter: While the cornbread is baking, prepare the honey butter. In a small bowl, mix together softened butter, honey, and cinnamon (if using) until smooth and well blended.

                Cool and Serve: Remove the cornbread poppers from the oven and allow them to cool slightly in the pan for 5 minutes. Carefully remove them and serve warm with the honey butter spread on top.
