Ingredients
  

2 ½ cups all-purpose flour

2 cups granulated sugar

½ cup unsalted butter, softened

1 cup whole milk

4 large eggs, separated

1 tablespoon baking powder

½ teaspoon salt

1 teaspoon vanilla extract

1 teaspoon almond extract

1 ½ cups dried fruits (raisins, currants, and chopped pecans)

½ cup whiskey or brandy (optional)

1 cup buttercream frosting (store-bought or homemade)

⅓ cup shredded coconut (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.

    Prepare the Cake Batter: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. This should take about 3-4 minutes with an electric mixer.

      Add Egg Yolks: Add the egg yolks one at a time, mixing well after each addition. Stir in the vanilla and almond extracts.

        Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt.

          Mix in Milk and Dry Ingredients: Slowly add the dry ingredients to the butter mixture, alternating with the milk. Start and end with the flour mixture. Mix until just combined.

            Whip Egg Whites: In another bowl, beat the egg whites to stiff peaks. Gently fold the beaten egg whites into the cake batter until fully incorporated.

              Add Dried Fruits: Fold in the dried fruits and nuts, ensuring they're evenly distributed. If using whiskey or brandy, stir it in now.

                Bake: Evenly distribute the cake batter among the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.

                  Frost the Cakes: Once the cakes are completely cool, place one layer on a serving plate and spread a thin layer of buttercream frosting on top. Repeat with the second layer. Place the third layer on top and frost the entire cake with the remaining buttercream.

                    Garnish: Sprinkle shredded coconut on top for added texture and decoration.
