4 boneless, skinless chicken breasts

Salt and pepper, to taste

1 teaspoon paprika

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup cremini or button mushrooms, sliced

1 teaspoon dried thyme

1 teaspoon garlic powder

1 cup chicken broth

1 cup heavy cream

2 tablespoons chopped fresh parsley, for garnish

Instructions
 

Season the Chicken: Start by seasoning both sides of the chicken breasts with salt, pepper, and paprika.

    Sear the Chicken: In a large skillet over medium-high heat, heat the olive oil. Once hot, add the chicken breasts and cook for about 5-6 minutes on each side until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the chopped onion and minced garlic. Sauté for about 2-3 minutes until the onion becomes translucent. Then, add the sliced mushrooms and continue to cook until they are tender, about 4-5 minutes.

        Add Seasonings: Stir in the dried thyme and garlic powder, mixing well with the mushrooms and onions to release the flavors.

          Create the Sauce: Pour in the chicken broth, scraping any browned bits from the bottom of the skillet. Allow it to simmer for about 5 minutes to reduce slightly.

            Finish the Sauce: Lower the heat, then stir in the heavy cream. Allow the mixture to simmer gently for another 3-4 minutes until it thickens slightly. Adjust seasoning with salt and pepper, if necessary.

              Smother the Chicken: Return the seared chicken breasts to the skillet, coating them well with the creamy sauce. Simmer for an additional 5 minutes to heat through.

                Serve: Garnish with fresh parsley and serve the smothered chicken over rice, mashed potatoes, or with crusty bread to soak up the delicious sauce.
