Smothered Baked Chicken Burritos

2 cups cooked chicken, shredded

1 cup cooked rice (white or brown)

1 cup black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 cup shredded cheddar cheese

1 cup salsa

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

6 large flour tortillas

1 cup enchilada sauce (red or green)

Fresh cilantro for garnish (optional)

Sour cream for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Chicken Filling: In a large bowl, combine the shredded chicken, cooked rice, black beans, corn, half of the cheddar cheese, salsa, cumin, garlic powder, onion powder, paprika, salt, and black pepper. Mix well until all the ingredients are thoroughly combined.

      Assemble the Burritos: Lay one tortilla flat on a clean surface. Spoon about ½ cup of the chicken filling into the center of the tortilla. Fold in the sides and then roll it up from the bottom to secure the filling. Repeat this process with all the tortillas.

        Prepare the Baking Dish: Lightly grease a 9x13 inch baking dish. Spread a thin layer of enchilada sauce on the bottom of the dish to prevent sticking.

          Arrange Burritos: Place the rolled burritos seam-side down in the prepared baking dish. Once all the burritos are in the dish, pour the remaining enchilada sauce evenly over the top.

            Add Cheese: Sprinkle the remaining cheddar cheese on top of the sauced burritos.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                Serve: Once cooked, remove from the oven and let them sit for a few minutes. Garnish with fresh cilantro if desired. Serve warm with sour cream on the side.
