Ingredients

For the Crust:

1 ½ cups graham cracker crumbs

⅓ cup granulated sugar

½ cup unsalted butter, melted

For the Cheesecake Filling:

16 oz cream cheese, softened

½ cup granulated sugar

½ cup brown sugar

3 large eggs

1 tsp vanilla extract

1 cup mini marshmallows

½ cup chocolate chips

For the Topping:

1 cup heavy whipping cream

2 tbsp powdered sugar

½ cup chocolate ganache (store-bought or homemade)

½ cup mini marshmallows

½ cup crushed graham crackers

Instructions

Prepare the Crust: In a medium bowl, mix together the graham cracker crumbs, granulated sugar, and melted butter until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake at 350°F (175°C) for 8-10 minutes until lightly golden. Remove from the oven and let it cool.

Make the Filling: In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add the granulated sugar and brown sugar, mixing until fully combined. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Add the Mix-ins: Gently fold in the mini marshmallows and chocolate chips into the cheesecake batter. Make sure they are evenly distributed.

Bake the Cheesecake: Pour the filling over the cooled crust in the springform pan. Bake at 325°F (160°C) for 55-60 minutes or until the center is set but still slightly jiggles when shaken. Turn off the oven and leave the cheesecake inside with the door slightly ajar for about an hour to prevent cracking.

Cool & Chill: Remove the cheesecake from the oven and let it cool at room temperature for about 2 hours. Then refrigerate for at least 4 hours or overnight for best results.

Prepare the Topping: Before serving, whip the heavy cream with the powdered sugar until you reach soft peaks. Spread or pipe the whipped cream over the chilled cheesecake.

Add the Finishing Touches: Drizzle the chocolate ganache over the whipped cream, then sprinkle the mini marshmallows and crushed graham crackers on top for that classic S’mores touch.

Serve & Enjoy: Carefully remove the sides of the springform pan, slice the cheesecake, and serve chilled.
