Smoky Gouda Mac and Cheese Bites

2 cups elbow macaroni

4 tablespoons unsalted butter

1/4 cup all-purpose flour

2 cups whole milk

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon Dijon mustard

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

2 cups shredded aged Gouda cheese

1 cup panko breadcrumbs

1/4 cup grated Parmesan cheese

Cooking spray or olive oil for greasing

Instructions
 

Cook the Pasta:

    In a large pot, bring salted water to a boil. Add the macaroni and cook until al dente according to package instructions. Drain and set aside.

      Make the Cheese Sauce:

        In a saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for about 1 minute until bubbly and slightly golden. Gradually add the milk, whisking continuously to prevent lumps from forming.

          Season the Sauce:

            Stir in the smoked paprika, garlic powder, onion powder, Dijon mustard, salt, and pepper. Continue cooking until the sauce thickens and coats the back of a spoon.

              Add the Cheese:

                  Shape the Bites:
