Ingredients

1 lb boneless, skinless chicken breasts

2 cups cornflakes, crushed

1/2 cup all-purpose flour

2 large eggs

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional for extra heat)

1/2 cup buttermilk

Cooking spray or oil for baking

Instructions

Prep the Chicken: Cut the chicken breasts into strips, roughly 1 inch thick. Place them in a mixing bowl and pour in the buttermilk. Let them marinate for at least 30 minutes (or up to 2 hours) to tenderize and enhance flavor.

Prepare the Coating: In a large bowl, combine the crushed cornflakes, flour, smoked paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper (if using). Mix well to ensure all the spices are evenly distributed.

Set Up Your Dipping Station: In another bowl, whisk the eggs until well combined, creating an egg wash for the chicken strips.

Coat the Chicken: Remove the chicken strips from the buttermilk, letting excess drip off. Dip each strip first into the egg wash, then coat thoroughly with the cornflake mixture, pressing gently to adhere the crumbs onto the chicken.

Prepare for Baking/Frying: Preheat the oven to 400°F (200°C) if baking. Line a baking tray with parchment paper and lightly spray it with cooking spray. If frying, heat about 1 inch of oil in a large skillet over medium-high heat until shimmering.

Cook the Chicken: For baking, arrange the coated chicken strips on the prepared baking tray and lightly spray the tops with oil for crispiness. Bake for 15-20 minutes or until golden brown and cooked through, turning halfway. For frying, carefully place a few chicken strips into the hot oil, cooking for about 3-4 minutes on each side until golden and cooked through. Remove and place on paper towels to drain excess oil.

Serve and Enjoy: Serve the Smoky Cornflake Chicken Strips hot, paired with your favorite dipping sauce, such as ranch or barbecue sauce. Enjoy their crunchy texture and smoky flavor!
