2 tablespoons olive oil

2 tablespoons chipotle in adobo sauce, minced

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon cumin

8 small corn tortillas

1 cup red cabbage, finely shredded

1 avocado, sliced

½ cup fresh cilantro leaves, chopped

1 lime, cut into wedges

¼ cup sour cream or Greek yogurt (optional)

Instructions
 

Marinate the Shrimp: In a bowl, combine the olive oil, chipotle in adobo sauce, smoked paprika, garlic powder, cumin, salt, and pepper. Add the shrimp and toss to coat well. Let it marinate for at least 20 minutes in the refrigerator to allow the flavors to develop.
