Smoky Chipotle Black Bean Chili

2 cans (15 oz each) black beans, rinsed and drained

1 can (28 oz) diced tomatoes with green chilies

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (any color), diced

2 tbsp olive oil

2 tsp ground cumin

2 tsp smoked paprika

1-2 canned chipotle peppers in adobo sauce, minced (adjust according to heat preference)

1 tsp adobo sauce from chipotle can

2 cups vegetable broth

1 tbsp brown sugar

Salt and pepper to taste

Fresh cilantro, for garnish

Lime wedges, for serving

Avocado, diced (optional)

Instructions
 

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and bell pepper, and sauté until softened, about 5-6 minutes. Add the minced garlic and cook for another minute until fragrant.

    Add Spices: Stir in the ground cumin, smoked paprika, and minced chipotle peppers along with the adobo sauce. Cook for about 2 minutes, allowing the spices to bloom and impart their flavors.

      Combine Main Ingredients: Pour in the diced tomatoes with their juices, black beans, and vegetable broth. Stir well to combine all the ingredients.

        Season & Simmer: Add the brown sugar, and season with salt and pepper to taste. Bring the chili to a gentle boil, then reduce the heat to low and let it simmer uncovered for about 20-30 minutes, stirring occasionally. This allows the flavors to meld and the chili to thicken slightly.

          Adjust Seasoning: Taste the chili and adjust seasoning if necessary. If you prefer more heat, feel free to add additional minced chipotle peppers.

            Serve: Once the chili is heated through and thickened to your liking, serve it hot in bowls. Garnish with fresh cilantro and diced avocado (if using), and provide lime wedges on the side for squeezing over the top.
