8 oz elbow macaroni

2 cups smoked Gouda cheese, shredded

1 cup sharp cheddar cheese, shredded

1 cup cream cheese, softened

4 cups whole milk

1/2 cup unsalted butter (1 stick)

1/2 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and black pepper to taste

1/2 cup breadcrumbs (optional, for topping)

2 tablespoons olive oil (optional, for toasting breadcrumbs)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Cheese Sauce: In a large saucepan, melt the butter over medium heat. Once melted, whisk in the flour to form a roux, cooking for about 2 minutes until golden and bubbly.
