2 lbs beef chuck, trimmed and cut into 1-inch cubes

2 tablespoons olive oil

1 large onion, diced

4 cloves garlic, minced

4 medium-sized Hatch green chiles, seeded and diced (or canned Hatch chiles)

3 medium potatoes, peeled and diced

3 medium carrots, chopped

2 cups beef broth

1 cup diced tomatoes (canned or fresh), juice reserved

2 teaspoons ground cumin

2 teaspoons smoked paprika

1 teaspoon dried oregano

1 teaspoon salt (or to taste)

1/2 teaspoon black pepper

2 tablespoons lime juice

Fresh cilantro, for garnish (optional)

Sour cream, for serving (optional)

Instructions
 

Sear the Beef: In a large skillet over medium-high heat, heat the olive oil. Add the beef cubes in batches, searing until browned on all sides (about 3-4 minutes per batch). Remove the beef and transfer to the slow cooker.

    Sauté Aromatics: Using the same skillet, add the diced onion and garlic. Sauté until the onion becomes translucent (about 5 minutes). Transfer this mixture to the slow cooker with the beef.

      Combine Ingredients: In the slow cooker, add the diced Hatch chiles, potatoes, carrots, beef broth, diced tomatoes along with their juice, cumin, smoked paprika, oregano, salt, and pepper. Stir everything together until well combined.

        Slow Cook: Cover the slow cooker and set it to low. Allow the stew to cook for 8 hours, or on high for 4-5 hours, until the beef is tender and the flavors have melded beautifully.
