Ingredients
  

3-4 pounds pork roast (shoulder or loin)

1 tablespoon olive oil

8 cloves garlic, minced

2 tablespoons fresh rosemary, chopped (or 1 tablespoon dried)

2 tablespoons fresh thyme, chopped (or 1 tablespoon dried)

1 tablespoon fresh parsley, chopped

1 teaspoon onion powder

1 teaspoon black pepper

1 teaspoon salt

1 cup low-sodium chicken broth

2 tablespoons balsamic vinegar

1 cup carrots, sliced (optional)

1 cup potatoes, diced (optional)

Fresh herbs for garnish (optional)

Instructions
 

Prepare the Pork: Pat the pork roast dry with paper towels. This will help in achieving a nice sear. Season generously with salt, black pepper, onion powder, rosemary, thyme, and parsley.

    Sear the Meat (optional): In a large skillet over medium-high heat, add olive oil. Once hot, carefully place the pork roast in the skillet and sear on all sides until golden brown (about 3-4 minutes each side). This step adds flavor but can be skipped if you're short on time.

      Prepare the Slow Cooker: In your slow cooker, pour in the chicken broth and balsamic vinegar. This will help keep the pork moist and infuse it with flavor.

        Add the Veggies: If using, place the sliced carrots and diced potatoes at the bottom of the slow cooker for even cooking.

          Add the Pork Roast: Place the seared pork roast on top of the veggies in the slow cooker.

            Add Garlic: Evenly distribute the minced garlic over the pork roast. This will add a wonderful aroma and flavor as it cooks.

              Plug In the Slow Cooker: Cover and cook on low for 8-10 hours or on high for 4-5 hours. The roast is done when it is tender and shreds easily with a fork.
