1.5 pounds beef stew meat, cut into 1-inch cubes

1 pound baby potatoes, halved

6 tablespoons unsalted butter, divided

6 cloves garlic, minced

2 cups beef broth

2 teaspoons dried thyme

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper, to taste

2 tablespoons fresh parsley, chopped (for garnish)

Sear the Beef: In a large skillet over medium-high heat, melt 2 tablespoons of butter. Season the beef cubes with salt, pepper, onion powder, and smoked paprika. Working in batches, add the beef to the skillet and sear on all sides until browned. Transfer the browned beef to the slow cooker.

    Prepare the Garlic Butter: In the same skillet, add the minced garlic and remaining 4 tablespoons of butter. Sauté the garlic for about 1 minute until fragrant, being careful not to burn it. Pour this garlic butter mixture over the beef in the slow cooker.
