3-4 pounds beef chuck roast

Salt and pepper, to taste

1 tablespoon olive oil

1 medium onion, sliced

4 cloves garlic, minced

2 cups beef broth

1 cup water

1 tablespoon soy sauce

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

4-6 hoagie rolls or French bread

2 cups shredded Swiss or provolone cheese

Instructions
 

Season the Roast: Generously season the beef chuck roast with salt and pepper on all sides.

    Sear the Beef: In a large skillet, heat olive oil over medium-high heat. Add the roast and sear it for 3-4 minutes on each side until browned. This step adds depth of flavor.

      Prepare the Slow Cooker: Place the sliced onions and minced garlic at the bottom of the slow cooker.

        Add the Roast: Carefully transfer the seared roast to the slow cooker on top of the onion and garlic.

          Mix the Broth: In a bowl, combine soy sauce, Worcestershire sauce, thyme, rosemary, beef broth, and water. Pour this mixture over the roast in the slow cooker.

            Cook: Cover and cook on low for 8-10 hours or until the beef is tender and easily shredded with a fork.

              Shred the Beef: Once done, remove the roast from the slow cooker and let it cool slightly. Shred the beef using two forks.

                Prepare the Sandwiches: Slice the hoagie rolls or French bread in half. If desired, layer the shredded beef evenly into each roll, add a generous amount of cheese on top.

                  Melt the Cheese: Place the filled sandwiches under a broiler for 2-3 minutes until the cheese is melted and bubbly.

                    Serve: Ladle some of the cooking juices from the slow cooker into small bowls for dipping. Serve the sandwiches warm with the au jus on the side for dipping.
