Ingredients

4 boneless, skinless chicken breasts

1 can (28 oz) crushed tomatoes

1 cup heavy cream

1 cup chicken broth

2 cups fresh spinach (or 1 cup frozen, thawed)

1 medium onion, diced

4 cloves garlic, minced

1 teaspoon dried basil (or 1 tablespoon fresh, chopped)

1 teaspoon Italian seasoning

½ teaspoon crushed red pepper flakes (optional)

Salt and pepper, to taste

½ cup grated Parmesan cheese

Fresh basil leaves, for garnish

Instructions

Prepare the Chicken: Season the chicken breasts with salt and pepper. Place them at the bottom of the slow cooker.

Create the Sauce: In a medium mixing bowl, combine the crushed tomatoes, heavy cream, chicken broth, diced onion, minced garlic, dried basil, Italian seasoning, and crushed red pepper flakes. Stir well to combine.

Combine Ingredients: Pour the creamy tomato sauce mixture over the chicken breasts in the slow cooker.

Slow Cook: Cover the slow cooker and cook on low for 6-8 hours, or on high for 3-4 hours, until the chicken is tender and fully cooked.

Add Spinach: About 30 minutes before serving, stir in the fresh spinach (if using fresh; if using frozen, add it earlier). Allow the spinach to wilt and blend into the sauce.

Finish the Sauce: Once the chicken is cooked, remove it from the slow cooker, and shred it using two forks. Return the shredded chicken to the slow cooker, and stir in the grated Parmesan cheese, mixing well until the cheese melts and thickens the sauce.

Serve: Spoon the creamy tomato basil chicken over rice, pasta, or crusty bread. Garnish with fresh basil leaves for an extra touch of flavor and color.
