12 oz pasta (penne or rotini work great)

1 can (15 oz) diced tomatoes with green chilies

2 cups vegetable or chicken broth

1 can (15 oz) cream of mushroom soup

1 cup Hatch green chilies, diced (canned or roasted)

1 cup heavy cream

1 cup shredded Monterey Jack cheese

1/2 cup grated Parmesan cheese

1 medium onion, chopped

3 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

Fresh cilantro for garnish

Optional: sliced avocado or lime wedges for serving

Prep the Slow Cooker: Begin by lightly greasing the interior of your slow cooker with cooking spray or a little olive oil.

    Combine Ingredients: In the slow cooker, combine the diced tomatoes with green chilies, vegetable or chicken broth, cream of mushroom soup, diced Hatch green chilies, onion, garlic, ground cumin, chili powder, smoked paprika, salt, and pepper. Stir everything together until well mixed.

      Add Pasta: Add the uncooked pasta to the mixture, ensuring it's evenly submerged in the sauce. This will help to absorb the flavors as it cooks.
