1 pound ground beef

1 onion, chopped

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) pinto beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (15 oz) diced tomatoes, undrained

1 can (4 oz) diced green chilies

2 cups frozen tater tot potatoes

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon paprika

Salt and pepper to taste

2 cups shredded cheddar cheese

1 cup sour cream (for serving)

Fresh cilantro or green onions for garnish (optional)

Instructions
 

Brown the Beef: In a skillet over medium heat, add the ground beef, chopped onion, and minced garlic. Cook until the beef is browned and the onions are softened, about 5-7 minutes. Drain any excess grease.

    Combine Ingredients: In the slow cooker, combine the browned beef mixture with black beans, pinto beans, corn, diced tomatoes, green chilies, chili powder, cumin, paprika, salt, and pepper. Mix well to combine all ingredients thoroughly.

      Add Tater Tots: Layer the frozen tater tots evenly over the top of the mixture in the slow cooker. Do not stir; the tater tots will form a topping.

        Cook: Cover the slow cooker and cook on low for 6-8 hours or high for 3-4 hours, until the tater tots are golden and the casserole is heated through.

          Add Cheese: About 30 minutes before serving, sprinkle the shredded cheddar cheese over the top of the tater tots. Cover and let the cheese melt.

            Serve: Scoop into bowls and top with a dollop of sour cream, and garnish with fresh cilantro or green onions if desired.
