Slow Cooker Cowboy Casserole

Ingredients
  

1 lb ground beef or turkey

1 medium onion, diced

3 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 can (6 oz) tomato paste

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

2 cups frozen tater tots

1 cup shredded cheddar cheese

Fresh cilantro or green onions for garnish (optional)

Instructions
 

In a skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain excess fat, then add the diced onion and minced garlic. Sauté until the onion becomes translucent, about 3-4 minutes.

    In the slow cooker, combine the cooked meat mixture, black beans, corn, diced tomatoes with green chilies, tomato paste, chili powder, cumin, smoked paprika, salt, and pepper. Stir thoroughly to blend all ingredients evenly.

      Cover the slow cooker and cook on low for 4 hours or on high for 2 hours.

        After the cooking time, remove the lid and gently stir in the frozen tater tots. Press them down into the mixture slightly so they are nestled in the ingredients.

          Cover the slow cooker again and cook on high for an additional 1 hour, until the tater tots are heated through and crispy on top.

            Sprinkle the shredded cheddar cheese over the casserole, cover, and cook for another 10-15 minutes until the cheese is melted.

              Once done, serve hot, garnished with fresh cilantro or chopped green onions if desired.
