1 lb boneless, skinless chicken breasts

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (14.5 oz) diced tomatoes with green chilies

4 cups chicken broth

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 teaspoon ground cumin

1 teaspoon paprika

1 teaspoon chili powder

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

1 tablespoon olive oil

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

Tortilla chips (for topping)

Avocado, diced (for topping)

Shredded cheese (optional for topping)

Sour cream (optional for topping)

Instructions
 

Prep the Chicken: Place the boneless, skinless chicken breasts at the bottom of the slow cooker.

    Layer the Ingredients: Add the rinsed black beans, drained corn, diced tomatoes with green chilies, diced onion, minced garlic, diced red bell pepper, ground cumin, paprika, chili powder, salt, and black pepper to the slow cooker.
