2 lbs boneless, skinless chicken thighs

1 cup teriyaki sauce

1/4 cup honey

2 tablespoons soy sauce (low sodium recommended)

1 tablespoon rice vinegar

3 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 red bell pepper, sliced

1 cup broccoli florets

1/4 cup green onions, chopped (for garnish)

1 teaspoon sesame seeds (for garnish)

Cooked jasmine or brown rice (for serving)

Instructions
 

Prepare the Sauce: In a medium bowl, whisk together the teriyaki sauce, honey, soy sauce, rice vinegar, garlic, and ginger until well combined.

    Add Chicken: Place the boneless chicken thighs in the slow cooker. Pour the teriyaki sauce mixture over the chicken, ensuring all pieces are well coated.

      Add Vegetables: Add the sliced red bell pepper and broccoli florets on top of the chicken.

        Cook: Cover the slow cooker with the lid and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and fully cooked.

          Shred Chicken (Optional): If desired, shred the chicken with two forks and stir it into the sauce for a more cohesive dish.

            Serve: Serve the chicken teriyaki over cooked jasmine or brown rice. Garnish with chopped green onions and sesame seeds for added flavor and crunch.
