Ingredients

9-12 lasagna noodles (no-boil recommended)

2 cups cooked and shredded chicken breast (rotisserie chicken works great)

3 cups Alfredo sauce (store-bought or homemade)

2 cups ricotta cheese

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

1 large egg

2 cups fresh spinach (optional)

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil, for garnish (optional)

Instructions

Prepare the Cheese Mixture: In a medium bowl, combine the ricotta cheese, egg, garlic powder, Italian seasoning, salt, and pepper. Mix until smooth and set aside.

Layer the Ingredients: In the slow cooker, spread a thin layer of Alfredo sauce on the bottom. Place a single layer of lasagna noodles over the sauce, breaking them as necessary to fit.

Add Chicken and Cheese: Spread half the shredded chicken evenly over the noodles. Dollop half of the ricotta cheese mixture over the chicken. Add a layer of fresh spinach if using, followed by a layer of Alfredo sauce and a sprinkle of mozzarella and Parmesan cheese.

Repeat Layering: Repeat the layering process until you run out of ingredients, finishing with a final layer of noodles, Alfredo sauce, mozzarella, and Parmesan on top.

Cook: Cover the slow cooker with its lid and cook on low for 4-6 hours or until the noodles are tender and the cheese is bubbly.

Serve: Let the lasagna sit for about 10-15 minutes after cooking to make it easier to slice. Garnish with fresh basil if desired and serve warm.
