Slow Cooker Beef and Barley Stew

2 pounds beef chuck, cut into 1-inch cubes

1 cup pearl barley, rinsed

4 cups beef broth

1 medium onion, diced

3 cloves garlic, minced

3 medium carrots, sliced

2 stalks celery, diced

1 cup mushrooms, sliced

2 medium potatoes, diced

1 tablespoon tomato paste

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 bay leaf

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Sear the Beef: In a large skillet over medium-high heat, add olive oil. Sear the beef cubes in batches until browned on all sides, about 5-7 minutes. Transfer to the slow cooker.

    Sauté Vegetables: In the same skillet, add onions, carrots, celery, and garlic. Sauté for 3-4 minutes until slightly softened. Add the sliced mushrooms and cook for another 2-3 minutes, then transfer to the slow cooker.

      Add Remaining Ingredients: To the slow cooker with beef and vegetables, add rinsed pearl barley, diced potatoes, tomato paste, thyme, rosemary, bay leaf, and beef broth. Season generously with salt and pepper.

        Cook on Low: Cover and cook on low for 8-10 hours or on high for 4-5 hours, until the beef is tender and the barley is cooked through.

          Adjust Seasoning: Before serving, taste and adjust the seasoning, adding more salt and pepper if necessary. Remove the bay leaf.

            Garnish and Serve: Serve hot, garnished with fresh chopped parsley for a burst of color and flavor.
