3-4 lbs beef chuck roast

1 cup balsamic vinegar

1/2 cup beef broth

1/4 cup brown sugar

4 cloves garlic, minced

1 medium onion, chopped

2 tablespoons soy sauce

2 tablespoons Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and black pepper to taste

2 tablespoons olive oil

2 cups baby carrots

4-5 medium potatoes, cut into chunks

Sear the Roast: Heat olive oil in a large skillet over medium-high heat. Season the beef chuck roast with salt and black pepper, then sear on all sides until browned (about 3-4 minutes per side). Remove from heat and place in the slow cooker.

    Prepare the Glaze: In a mixing bowl, combine balsamic vinegar, beef broth, brown sugar, garlic, soy sauce, Worcestershire sauce, thyme, and rosemary. Whisk until the brown sugar dissolves.

      Add Vegetables: Scatter the chopped onions, baby carrots, and potato chunks around the beef in the slow cooker.

        Pour the Sauce: Pour the balsamic glaze mixture over the roast and vegetables, ensuring everything is well coated.

          Slow Cook: Cover and cook on low for 8-10 hours or on high for 4-6 hours, until the beef is tender and easily shreds with a fork.
