6 to 8 medium-sized tart apples (such as Granny Smith or Cortland), peeled, cored, and chopped

1 cup brown sugar

1 cup granulated sugar (adjust to taste)

1 teaspoon cinnamon

½ teaspoon nutmeg

¼ teaspoon allspice

¼ teaspoon ground cloves

Juice of 1 lemon

1 teaspoon vanilla extract

Pinch of salt
